This is our first heirloom tomato preserve.  Picking from our tomato plants when they are young, the green fruit has a bright acidity and tang that when cooked releases a warm autumn tone.  The kitchen has the scent of fall when they’re in the pot.  For our finished preserve, the slices of heirloom tomatoes suspend in their warm honey-like syrup.

This is a small batch preserve with a limited production. 

Pairs beautifully with cheese, especially blue and sharp varieties.  We love to drizzle over our Greek yogurt or pancakes in the morning. 

We named this sweet preserve Imogen.
